Checkout, when a payment link is live, is handled by Stripe. Card data goes to Stripe, not into a shop database on this storefront. Stripe’s own notices apply at their domain.

Server logs may hold an IP and a user-agent for a short period so the site can be kept up. That is operations, not profiling.
